How to cook a roast for 10 people?

I'm cooking my first roast, its for 10 people and i'm cooking chicken. Can anybody help me or give me some tips? I'm cooking it today so need to hurry! Thank you :)How to cook a roast for 10 people?

make sure you give yourself plenty of time. you can cook the chicken to be ready 30 mins before you need it - it will need to rest a little anyway. so if you are eating at 2pm, have the chicken ready by 1.30pm, you can then carve at 1.50ish (get someone else to do that). make sure you have warm plates and really hot gravy - this will make sure the chicken is warm enough. do make sure the chicken is cooked enough - no pink juices etc (shove a knife or skewer in the thigh and check the juices are clear). finally work out timing for everything and write down on a bit of paper what time you need to start to cook things - how long does your veg take, roast potatoes etc. that way you'll be less stressed, and enjoy it more!
Going to need at least 2 big chickens.

I would start by roasting upside( breast) down and putting a peeled onion in the cavity.

Rubbing with oil pepper salt and a little garlic will help and a pinch of Tarragon.

Turn back and re- baste half way thru' roasting. This will give a moist chicken.
